There've been many over the years, from the venerable Street Fighter 2 to the infamous Mortal Kombat to the obscure Ehrgeiz to current favorites like Tekken and Soul Calibur. But my question to you all is, what makes a good fighting game?
To me, a fighting game needs:
1. Balanced characters - The quickest way to ruin a fighter is for one or two characters to totally dominate everybody else. Obviously not every character can be perfectly equal, but as long as you stand a reasonable chance with any or at least most characters, this part's alright.
2. Smooth controls - Fighting games are by nature fast-paced. And so they require responsive, easy-to-understand controls for you to be able to play. Lacking this has been the death of plenty of games (looking at you, Virtua Fighter).
3. Interesting individual characters - Don't really know what to say here, it seems obvious. A good fighting game needs good characters. And I believe they need to be individuals. A game in which nearly every character plays the same *coughMortalKombatcough* gets stale very quickly.
Those are the main qualities I believe make a good fighting game. As for individual games, I'll be happy to discuss some favorites and un-favorites once I see a couple more posts on what makes a good game.

killer instint - my all time favorite fighting game. some of my other favoirtes include super smash bros., marvel vs. capcom 2, street fighter, the original mortal combat, DOA2, and soul calibur 2 for game cube (go link!)
dont forget punch out ^.^

oh, i loved the chactars. all of them had their own backgrounds and special moves. they all were pretty balanced. controls were pretty straight forward. and nothing was cooler than hearing the sound of pulling off a 30 hit combo

I'm gonna guess you weren't thinking of Don Flamenco's dance? Okay, well argued. Let me debate with you, just for fun. Keeping in mind that Killer Instinct was the first SNES game I ever purchased. Certainly KI sports more individualized fighting styles than Mortal Kombat. Point in favor for KI. It also attempted to carry on the Fatality idea, which was the in thing back then. But consider this: when is the last time you played Killer Instinct? If you were to play that, followed by Street Fighter 2, then back to Killer Instinct and back again, I think you would find KI's controls responding horribly slowly by comparison. SF2 also had a huge roster by comparison, as well as more interactive environments. At the time, KI sported the slickest, darkest graphics, making Mortal Kombat look stiff by comparison and Street Fighter appear cartoony. But if you go back now, at least the SNES version looks fuzzy and rather messy. Whereas the somewhat cartoony brightness of Street Fighter 2 still looks just like it did back then. So what's my point? That Shaq Fu was a hilarious game.

Best SF game ever?....Capcom vs SNK 2 EO, but it coulda used more people for mega greatness
Killer Instinct?...It was good
Punch Out?...It rocks
Rocky 1 & 2?...a more advanced Punch Out..just great
Fight Night?...Loses to Rocky
Soul Calibur?...It does alright
Tekken Franchise?...About the same
Primal Rage?...Who doesn't like to watch a gorilla fart?
Some Personal Favorites?...War Gods, Marvel Infinity Gems, and Pit Fighter just cause it's funky

I enjoy the Tekken games because the characters are cool and more importantly I'm decent at it. I can win and I'm not oen fo those guys who's played every game since they have come out and know everyones moves and weaknesses. I also like Street Fighter 2 and Mortal Kombat Trilogy in 2 player. Mortal Kombat Trilogy is otherwise not fun because the computer cheats worse than any other fighting game I've played.

I always liked Eternal Champions. Though I was real little when I played it I thought that the story was cool. It was cool in the fact you could have a gangster from the 20's fight the prince of atlantis.

favorite fighting game, hmmm i would have to say my all time favorite which is rare to come by these days would be Dragonball GT the Final Bout, was one of the First fighting games i got into heavily,and renewed my interest in streetfighter, which is also a great game, i loved the games, but gt in my opinion takes the cake, many fighters, kick ass power struggles, and whats there not to like when you pull out a 132 hit combo

MK Trilogy had everything from Mortal Kombat 1-3 wrapped into one great package. Except it was way too hard. MK4 was the beginning of the end for that series; they haven't put out a good game since.
I love Tekken. The characters are remarkably well balanced. The graphics are slick. The fighting styles are pretty accurate to the martial arts they're based off of (excepting the throws, of course). Lei Wulong is Jackie Chan for all intents and purposes. What's not to like?
Dead or Alive is another great series. It has the smoothest Tag mode of any fighting game ever, putting Tekken Tag to shame in that area. The basics are unbelievably easy to pick up, without simply being button-mashing. Fighting is extremely fast-paced, making most other games seem slow by comparison. And you get to use the guy from Ninja Gaiden. My only issue here is that the story is pretty weak.
Oh wow, I thought I was the only other person in the world who played War Gods. That was what Mortal Kombat 4 should have been. It had fluid 3D movement, while still keeping to the same basic style as Mortal Kombat. The characters were cool, the fatalities cooler, and best of all they were simple, not like the madness of the later MK games. My only problem... the Mortal Kombat fighting style of uppercut, roundhouse, sweep and jump kick.

War Gods was awesome on 64...looked almost as fine as the Arcade machine...I had played it there first, before it was put on consoles...I liked everyone, but had to say Tak and Vallah were my favorites...
Another superb fighting game that comes to my mind was a much lesser known one that was very violent, and never made it to consoles...I've only seen it twice in my life, and I've spent a good deal of time in arcades around the country...Las Vegas, no exception...If you've ever played Bloodstorm, consider yourself a lucky person

The first place i ever saw it was at Harlem/Irving a long long time ago, back before the arcade was where its currently located, and was known as Aladdin's Castle
